To recap episode 1 we traveled to La Mancha, Spain to sample one of the most refined sheep's milk cheeses, Manchego. Voitsberg is the birthplace of todays choice coagulation, Bergfex. <img src="http://www.cookipedia.co.uk/wiki/images/thumb/4/40/Cheddar_cheese.jpg/300px-Cheddar_cheese.jpg" /> Bergfex is unlike any cheese that has ever graced my palette, a true Austrian mountain cheese. Concealed in its rich ivory colored body is a tart flavor reminiscent of the mold spores found in a cave aged bleu cheese. Although you do not feel it up front, the flavor is paramount in the aftertaste of Bergfex. The ripening period of four to six months gives this cheese its aromatic-savoury to piquant taste. It is smooth with occasional, small, round eyes and melts quite delicately. The rind is well developed with supple red cultures that contribute to its deep fruity flavor. I would recommend the less adventurous cheese eaters to stay away from Bergfex and go with a long aged swiss in its place.
