Ah, hello my fellow empteasers. It has been 3 months since we last gathered for a winding journey into the sumptuous world that is cheese. I am so glad to be back with you.

To recap episode 1 we traveled to La Mancha, Spain to sample  one of the most refined sheep's milk cheeses, Manchego. You can read that appetizing adventure &lt;a href="http://emptees.com/posts/16930-cheese-boner-episode-1-manchego"&gt;HERE.&lt;/a&gt;

Today we travel to Voitsberg, a small town nestled in the winding hills of the Styria region in Austria. Voitsberg is the birthplace of todays choice coagulation, Bergfex.

Bergfex is unlike any cheese that has ever graced my palette, a true Austrian mountain cheese. Concealed in its rich ivory colored body is a tart flavor reminiscent of the mold spores found in a cave aged bleu cheese. Although you do not feel it up front, the flavor is paramount in the aftertaste of Bergfex.

The ripening period of four to six months gives this cheese its aromatic-savoury to piquant taste. It is smooth with occasional, small, round eyes and melts quite delicately. The rind is well developed with supple red cultures that contribute to its deep fruity flavor.

I would recommend the less adventurous cheese eaters to stay away from Bergfex and go with a long aged swiss in its place. The ivory color and subtle aroma can mislead even the most seasoned of cheese palettes so biter beware!This has been Skull With Hair for Cheese Boner. just actually bought some manchego, very good taste but it cost me 10 bucks for a pound wtf!</body>

      <body>This totally inspired me to run out today and try some awesome cheeses. 

I got some &lt;a href="http://www.dcicheeseco.com/scripts/productDetail.asp?id=67"&gt;Chevrion&lt;/a&gt; and it is pretty amazing. It's a really mild and creamy goat cheese, with a little bit of tart in the aftertaste. Really really good on a basic entertaining cracker.</body>
