hah thanks, i learned a little from my mom and a lot from food network.

i cook steaks on a grill pan with the ridges, the key is letting the steak come to room temp first, and have your grill pan screaming hot, then just put the steak on and you only have to flip once. 

if you are cooking real thick steaks, like over 1" you can do it like the restaurants do. preheat your oven to 450, and put a dry oven safe pan over super high heat on the stove. cover your room temp steak with olive oil/s+p. just put it on the stove for 2 minutes, flip, and then just throw the whole pan in the oven to finish. about 5-7 minutes. this is also my favorite way to cook fish.

just remember that fucking handle is hot, don't grab it or you burn your hand up like marv in home alone. i did.

Ah cheers for that, I think my problem is I don't let my pan get hot enough, and therefore things get more "baked" than grilled.  And don't worry, you aren't the only one that burns their hands on the handle.  Hurts like a mooooofoooo

I'm not positive about pei wei, but I prefer mine pretty browned and somewhat crispy

Usually I'll heat up oil in a pan or wok [medium to high heat], and grab some extra firm tofu [never silken, bad experiences], cut it up, toss it into the pan and let it fry on one side for a while before checking - usually around this point I'll add any sauces I want the tofu to absorb.. and continue allowing it to fry while stirring to spread the sauce around - it's mostly about checking each side of the tofu, and flipping it until it's as fried as you'd like, and getting lucky with the amount of oil and heat. I haven't really gotten restaurant quality yet, but it's still good stuff.. let me know if you ever figure it out.

I don't usually follow recipes and shit, so I don't really know what I'm talking about - I just wing it until it looks tasty, and it usually is.

edit: forgot to mention, usually when the tofu is cooked about 5/6 of the way through I'll add any noodles/vegetables, because the tofu is going to continue cooking a bit when you're frying the veggies and junk, and I usually like my noodles a bit crisp too.</body>

I think she just means in terms of a stir fry like what I was talking about, different types of tofu serve different purposes, and using silken tofu for stir fry was not a good idea.</body>
